Dear Readers,
Yesterday my wife went for western lunch at their campus restaurant managed my the department of Hospitality. one of the menu she took was the broccoli creamy soup.
So she loved the taste of the soup, and she asked the chef about how to prepare it. and briefly the chef told her and my wife was sure that was not the whole story or the complete recipe.
And she went home and told me all about their lunch, what she took, who pays for it and finally her favorite broccoli soup and she said she is going to prepare one tomorrow that is today.
I told her yes we can go and get the ingredients for the soup since we have an appointment with our gynecologist....no..no..no...nothing serious its just that my wife is almost due for our 2nd child.
Back to the broccoli soup, you each time when my wife has a new recipe to try or something new that tickles her taste buds. she would tell me all about it, how she plans to prepare it and when she want to try it and the funny thing is, I will be the one that do all the cooking Substitute cook in the house...
So about this broccoli soup, today after returned from our appointment. we went to Merdeka supermarket. this is one of the 2 supermarket available in KK the other one is Tong Hing Supermarket, these 2 has all the imported vege, ingredients everything you name it they have it.
And after getting all the required ingredient, since I am the one to prepare it so I told her she is the one who is going to pay for all these ingredients...hehehehe...win win situation.
It is now half pass 5, so I prepare all the raw ingredients and get ready to mix, chop, diced, wash, rinse, boiled, simmer till tender and finally blending the whole thing... and my wife favorite Broccoli Creamy soup is all ready...
I let my 3 year old daughter taste it, and she said yum-yum I like it daddy... below is a photo of the final product..I guess I'm gonna improve my presentation ya..

Below are the recipe for the soup and how to prepare it...Yum..Yum
Ingredients
- 2 tablespoons butter
- 1/2 cup cream, heavy, light or
- 1 onion, chopped
- half-n-half
- 1 russet potato, peeled and chop
- Nutmeg, to taste
- 6 cups canned chicken stock, warmed
- Salt
- 3 cups chopped broccoli florets and stems
- Pepper
Directions
In a large pot, melt butter and cook onion until tender over medium high heat. Add potato and toss to coat with butter. Add hot stock and bring to a simmer. Stir in broccoli and return to a simmer. When potato and broccoli are tender, puree in batches in a blender or food processor. Return to pot and add cream. Season to taste and serve warm
